Aged & Butchered Bali es la sede en la isla del asador de carnes maduradas en seco del mismo nombre de Yakarta, gestionado por MDA Restaurants dentro del hotel The Komu, en Berawa. Su gran atractivo es su biblioteca de cortes madurados en seco, asados sobre carbón de madera de café, con parrillas de mesa al estilo yakiniku japonés donde los chefs cocinan frente a los comensales. El salón, sofisticado y de ambiente íntimo, suma una fuente de sake, una amplia colección de vinos y una zona de bar al aire libre. Una dirección construida en torno a la parrilla, para una velada dedicada a la buena carne.

Meet our Koji Aged Bavette. Koji is a traditional Japanese fermentation culture grown on grains such as rice or barley. Best known for its role in making miso, sake, and soy sauce, koji is also used to naturally tenderize beef while enhancing its umami and depth of flavor.
