Aged & Butchered Bali è la sede sull'isola dell'omonima steakhouse di carni frollate a secco di Giacarta, gestita da MDA Restaurants all'interno dell'hotel The Komu a Berawa. Il punto forte è la sua biblioteca di tagli dry-aged, cotti alla brace su carbone di legno di caffè, con griglie da tavolo in stile yakiniku giapponese dove gli chef cucinano davanti agli ospiti. La sala, elegante e dall'atmosfera soffusa, aggiunge una fontana di sake, un'ampia collezione di vini e un'area bar all'aperto. Un indirizzo costruito attorno alla griglia, per una serata di bistecca fatta sul serio.

Meet our Koji Aged Bavette. Koji is a traditional Japanese fermentation culture grown on grains such as rice or barley. Best known for its role in making miso, sake, and soy sauce, koji is also used to naturally tenderize beef while enhancing its umami and depth of flavor.
