Aged & Butchered Baliは、ジャカルタの同名ドライエイジング・ステーキハウスのバリ島店で、BerawaのホテルThe Komu内でMDA Restaurantsが運営しています。目玉は、ドライエイジングした熟成肉が並ぶミートライブラリー。コーヒーの木の炭で焼き上げるほか、テーブルには日本の焼肉スタイルのグリルが備わり、シェフがゲストの目の前で焼き上げます。ムーディーでスタイリッシュな店内には、日本酒の噴水、充実したワインコレクション、屋外のバーエリアも。グリルを主役にした一軒で、本格ステーキを味わう夜にどうぞ。

Meet our Koji Aged Bavette. Koji is a traditional Japanese fermentation culture grown on grains such as rice or barley. Best known for its role in making miso, sake, and soy sauce, koji is also used to naturally tenderize beef while enhancing its umami and depth of flavor.
