Tasting menu in Bali: degustation, omakase and set menus

Tasting menus in Bali: Koral's signature degustation beside the aquarium in Nusa Dua, Miss Fish's seasonal omakase in Berawa, Sardine's vegetarian set menu. How to book, what to tell them.

Updated October 26, 2026 · 4 min read

For a tasting menu in Bali, Koral at The Apurva Kempinski in Nusa Dua serves a signature degustation menu, inspired by Indonesian coastal flavours, beside its aquarium tanks. Miss Fish in Berawa runs a seasonal omakase with, in its own words, "No menu. Just trust." Sardine in Seminyak has a vegetarian set menu among its seafood. Each sets its own terms, so tell the restaurant about allergies when you book. FirstBali makes the request through the concierge.

Three ways a tasting menu works here

  • A degustation menu: the kitchen sets the sequence and you sit at a table. Koral's is the example.
  • An omakase: the chef chooses as the evening goes, often at a counter. Miss Fish's is the example; see the chef's table guide for the counter itself.
  • A set menu: a fixed sequence, sometimes built around a diet, such as Sardine's vegetarian one.

For the wider picture of chef-led rooms on the island, read fine dining in Bali. Whichever you choose, a tasting menu asks for the whole evening: plan nothing tight around it, and tell the table in advance that the kitchen, not the guests, sets the pace.

Koral, Nusa Dua

The Apurva Kempinski sits on the cliffs of Nusa Dua facing the Indian Ocean. Koral, which the hotel presents as Bali's first aquarium restaurant, offers "an array of artisanal set menu and signature degustation menu", inspired by Indonesian coastal flavours and built on local ingredients; the menu is subject to change without notice.

What to know before you ask:

  • Adults only at dinner. Koral caters exclusively to adults during dinner service; children of 12 and under may come at lunch, seated.
  • Tunnel tables are for two adults aged 17 and above, and must be paid in full to book; regular tables take a deposit. Neither is a confirmation until Koral confirms the table.
  • Smart casual: no sportswear, sleepwear or flip-flops; at dinner men wear trousers and no sleeveless tops.

Miss Fish, Berawa

Miss Fish's omakase pairs Japanese technique with European and Latin American influences, led by Executive Chef Carlos Barvo. There is no fixed menu: the sequence starts light, with sashimi or delicate nigiri, and builds towards richer, warmer dishes, following the season. Wagyu, toro and fresh seafood often appear, depending on what is available. The team can suggest sake or whisky pairings, and the restaurant adjusts for preferences "where possible", so state any allergy when booking. Counter seats are limited. Later in the evening, DJs take over.

Sardine, Seminyak

Sardine, the K-Club Group's seafood restaurant on Jalan Petitenget, cooks the daily catch in a modern Mediterranean style with vegetables from its own farms, and offers a vegetarian set menu, a useful answer when one guest at the table does not eat fish. Les Toilettes, the club on site, keeps the evening going.

After the last course

A tasting menu is an evening in itself, but it can open a night out. From Nusa Dua, the clubs of the Bukit are the natural next step: Savaya on the Pecatu clifftop runs Last Light every Monday, a sunset set from The Cube, and headliners at weekends; Savaya reports that DJ Mag's Top 100 Clubs named it number one in Asia from 2024 to 2026 and fifth in the world in 2026. From Berawa, Desa Kitsuné turns its garden into a party every Tuesday and Friday; in Kuta, Zumana has Ritual of the Sun on Saturdays. All three are 21+ with a valid passport or driver's licence.

How to book a tasting menu

  1. Choose the format first: degustation, omakase or set menu.
  2. List every allergy and diet in the request; tasting kitchens prepare ahead.
  3. Say if it is an occasion. The concierge passes it on and checks what the restaurant can arrange.
  4. Read the restaurant's terms: deposits, full payment for some tables, age rules. A payment is not a confirmation.
  5. Plan the ride home or onwards with a private driver.
