For Asian fusion in Bali, the clearest address is MîA in Berawa, a modern Asian restaurant whose sharing plates pair Asian traditions with contemporary technique. For Japanese technique meeting European and Latin American flavours, Miss Fish, also in Berawa. For European cooking shaped by Asian flavours, CURE Bali at Regent Bali Canggu. FirstBali asks for the table through the concierge.
Fusion, three ways
"Fusion" can mean very different dinners. It can be an Asian kitchen cooking with modern, Western technique (MîA). It can be a Japanese kitchen opening itself to other continents (Miss Fish). Or it can be a European kitchen seasoned by Asia (CURE Bali). Knowing which direction you want makes the choice easy. If you want Japanese food without the fusion, from omakase to teppanyaki, read our Japanese restaurants guide instead.
Modern Asian for sharing: MîA, Berawa
MîA, on Jalan Raya Semat in Tibubeneng, presents itself as "Modern Asian Cuisine", drawing on "Asia's rich culinary traditions" and "blending bold flavors, fresh ingredients, and contemporary techniques". It does not use the word fusion itself, but the plates speak for it: Wagyu gyoza with karashi mustard, soft-shell crab with amazu ponzu, Chilean sea bass tempura, Thai green curry. The menu is built for sharing, the drinks are made to match the food, and the setting mixes modern style with traditional touches under the open sky. A table here is meant for a group of friends. More in the MîA guide.
Japanese with Europe and Latin America: Miss Fish, Berawa
Miss Fish, a few steps along the same road, is a Japanese restaurant whose executive chef, Carlos Barvo, pairs Japanese technique with European and Latin American influences in a seasonal omakase. You can sit at the onyx Omakase Bar for the chef-guided sequence, on the open-air Patio, or in the Lounge for cocktails and shared plates. The bar holds more than forty sakes and Japanese whiskies, and later in the evening DJs take over. Dress code: smart casual. See the Miss Fish guide.
European cooking, Asian flavours: CURE Bali, Canggu
At Regent Bali Canggu, IHG's beachfront resort on Batu Bolong, Chef Andrew Walsh leads two restaurants. CURE Bali is the fusion one: European cooking shaped by Asian flavours. Its sister, Sazón, is Mediterranean, and The Beach House pairs its pool with seafood and craft cocktails, which makes the resort an easy choice for a group that cannot agree. The Regent Bali Canggu guide covers the resort.
Chinese and Japanese under one roof: The Apurva Kempinski, Nusa Dua
On the cliffs of Nusa Dua, The Apurva Kempinski gathers several Asian kitchens. Bai Yun serves hot pot and dim sum; Izakaya by OKU, a sister to OKU in Jakarta, does sake and small plates at an open-kitchen counter. Neither is fusion in the strict sense, but together they make the resort the place in the south for an Asian dinner. Every table there is in our Apurva Kempinski guide.
An Asian touch at the bar: Jade
At Jade by Todd English in Berawa the food is Mediterranean, cooked over a wood fire, but the cocktail bar gives its drinks "a touch of Asia". Useful to know if you want a pre-dinner drink that leans east before a meal that does not.

Booking
Shared Asian menus suit groups, so tell the concierge the number of guests, the date and any allergy: shellfish, soy, sesame and peanuts appear widely in these kitchens. We ask the restaurant on your behalf, pass on any terms it sets, and the table is yours once the restaurant confirms.
